Henri Dudognon represents the next generation of culinary excellence at La Chapelle Saint-Martin, the Michelin-starred Relais & Châteaux property in Limoges, France. Born in Limoges and raised around his family’s celebrated kitchens, Henri developed an early appreciation for the ingredients and traditions of the Limousin. He went on to refine his craft at some of Europe’s most distinguished restaurants, including La Bastide Saint-Antoine with Jacques Chibois, Les Prés d’Eugénie with Michel Guérard, and Sketch in London with Pierre Gagnaire.

Returning to La Chapelle Saint-Martin, Henri now works alongside his father, Chef Gilles Dudognon, whose Michelin-starred legacy has shaped the property for four decades. Together, they honor the culinary traditions of the Limousin while embracing a contemporary sensibility, guided by seasonality, exceptional local producers, and produce from the estate’s own garden. As Henri takes an increasingly prominent role in the kitchen, he brings his own energy and perspective to the family legacy, adding thoughtful, inventive touches to the classic French cuisine for which La Chapelle Saint-Martin is known.
