In Conversations with Winemakers: Screwcap VS Cork

January 15, 2027

Time & Location: 2:00 pm to 4:00 pm | Estate Ballroom III

Join PlumpJack Collection of Wineries Partner & General Manager John Conover and CADE Estate Winemaker Danielle Cyrot for an engaging and interactive seminar exploring one of the wine industry’s most debated topics: cork versus screw cap closures.
The seminar begins with a brief history of the PlumpJack Collection before guests embark on a guided blind tasting featuring current release and library wines from PlumpJack Estate Winery, CADE Estate Winery, and Odette Estate Winery, including each winery’s flagship Estate Cabernet Sauvignon.
Guests will first taste the 2023 Estate Cabernet Sauvignons from all three estates, presented under both cork and screw cap closures. Using auction-style paddles, participants will vote for their preferred wine and closure before learning which wines were tasted.
The second tasting features library vintages with approximately 10 years of age, offering a unique opportunity to experience how different closures influence a wine’s evolution over time. Throughout the seminar, Danielle will share insights into the science behind screw cap technology, including liner composition, oxygen transmission, and the groundbreaking research conducted in partnership with UC Davis on screw cap closures in luxury wines.
Following the second tasting, guests will once again cast their votes and compare their impressions, creating a lively and interactive discussion around perception, preference, and the science of wine aging.
This entertaining and educational seminar will conclude with an open Q&A session.
